Our standard pour was 1.25 ounces (~40 ml), and it was understood by the bar manager (himself a former bartender at this club) this volume was elastic. This meant up to a quarter-ounce was ours to play with. If we didn’t get greedy and knew when to short the right drink that quarter-ounce, the customers would be happy and the pour costs would stay in line.
